Wow! What a complex, full-bodied, concentrated, fruity and tasty grape nectar. This is how a sweet sherry should be. Raisins, dried figs, dried apricots, dates, dark chocolate, brown sugar, walnuts, cinnamon and roasted almonds characterize this wonderful, sweet sherry.

Real Tesoro Eminencia Pedro Ximénez NV consists of 100% Pedro Ximénez-grapes. It is made from late harvested grapes, i.e. the grapes that have been harvested when they had reached their maximum sugar content. Taking into account that summers are very hot and dry in the Jerez-Xérès-Sherry wine region, the risk that the grapes would destroyed due to rain before harvest is minimal. After harvest, the overripe grapes are dried on straw mats in the sun. The purpose of drying is to reduce their amount of water, concentrate their sugar content and to increase their aroma- and flavour richness. After drying, the dried grapes are carefully destemmed and pressed and the pressed very sweet must, from the first pressing, is fermented in stainless steel tanks until the fermentation process is complete. Then the finished fermented sherry with an alcohol strength of 11-12% is fortified to 17% with strong grape spirit and then it undergoes a 12 month long sola-process in American oak barrels.

Real Tesoro Eminencia Pedro Ximénez NV should be served at 10°C with a cocoa-rich chocolate cake (as little sweet as possible) or with a cocoa-rich dark chocolate like Marabou Premium 70% Cocoa Orange or Lindt Excellence 78% or with a dark chocolate truffle or as a dessert in itself. When you enjoy Real Tesoro Pedro Ximénez NV hold the glass in your hand and feel how it grows in complexity as the temperature rises in the glass. I think that this sherry can be used as medicine against the darkness of autumn and winter. And it will fit just as well if you drink it outdoors during the cool summer evenings. Jerez-Xérès-Sherry soils, there are three types of soil: the first type, which is almost white and called albariza, consists of 50% of lime and the rest of clay, limestone and sand, the second type, which is dark brown and called barros, consists to 10% of lime and the rest is dominated by clay and the third type, which is yellowish and called arenas, consists to 10% of lime and the residue is dominated by sand. Albariza best suites for the cultivation of Palomino grapes and by law must 40% of the grapes, which are used for the production of sherry, come from it. Pedro Ximenez and Moscatel are mostly grown on barros and arenas.
