With this dry Port, Churchill's winery confirms once again that it belongs to one of the world's absolute best port wine producers. That to begin with to produce dry ports is something new in the port wine industry, but the fact that it is something new does not matter at all when Churchill's is in question because Churchill's always delivers some of the best ports in the world. And it seems that when Churchill's does something, it does it with the absolute highest perfectionism. The fact that the bottles for Churchill's Dry White Port NV are transparent is an absolutely brilliant idea. The aroma is characterized by dried fruits such as figs, apricots, grapes and prunes as well as nutmeg and eucalyptus. Added to this are orange peel, cloves and bay leaves. The flavour is characterized by a perfect bitterness, nuttiness, saltiness and minerality. Added to this are sage, nutmeg, orange peel, eucalyptus, cloves and dark chocolate. A very long and wonderfully bitter, peppery, fresh and salty aftertaste. The wine is not made to be aged; it is made to be drunk with great pleasure now or within the next two years.
The wine will be perfect as a refreshing fresh aperitif consisting of tonic, a few ice cubes and two orange halves. Or as a chilled to 8ºC social drink without anything. You can also enjoy this fabulous port wine with dates filled with feta cheese, smoked salmon, charcuterie, or with different types of tapas such as patatas bravas (roasted potatoes), tortilla de patatas (potato omelette), jamón ibérico (air-dried ham), chorizo (spicy sausage), marinated olives or with lots of different cheeses such as Castello Blue, Gorgonzola, Parmigiano Reggiano, Roquefort, Stilton and Västerbotten. It should be drunk at 8 to 10ºC. If you can, drink it from Riedel Vinum Port or Orrefors Difference Sweet or Orrefors Elixir.
Churchill's Dry White Port NV consists of 100% Malvasia Fina, Rabigato, Côdega and Viosinho. The grapes for this wine come from specially selected old vineyards located on steep slopes in Cima Corgo, Douro. The soil consists of slate. The grapes are picked and sorted by hand. After very careful selections in both the vineyards and the winery, the grapes are cooled to 10ºC overnight. Then the grapes with stems (100%) are crushed by foot treading by mechanized feet in low stone vats (lagares), which are made of granite, at Quinta da Gricha. The grape must, which consists of crushed grapes, stems and grape juice, undergoes a light maceration and then fermentation. Only the natural yeast, which comes from the vineyards, is used. After the fermentation, the grape must is gently pressed and the wine is transferred to 600 liters old oak barrels where it is aged for a period of 10 years. Finally, the wine is filtered and bottled, and aged for a few more months before being released on the market.
