Joseph Phelps Vineyards, Insignia, one of the most internationally known red wines from the United States. The wine is made of 70 to 90% Cabernet Sauvignon and 10 to 30% Merlot. Since 1995, a little of Malbec and Petit Verdot is also added in some vintages. The grapes are sorted three times. The first sorting is done during the harvest, which is always done by hand. The second sorting is done before the destemming and the third takes place after the destemming, grape by grape. The different grape varieties and the different parts of the vineyards are vinified separately. First, the must is cold macerated for 5 days and then it undergoes a 40 days long fermentation / maceration in the stainless steel tanks with regular pumping over of the must. The malolactic fermentation, and the aging takes place in new French oak barrels for 24 months. Joseph Phelps Vineyards, Insignia has a long aging potential, upwards of 40 years. (2011-12)
