Phenolic maturity, a balance between the sweetness, the phenols (tannins and coloured pigments) and the tartaric acids. Phenolic maturity has a very great importance for the flavour and aging potential of the wine. For example, if the grapes have reached a perfect sugar maturity but have not reached a good phenolic maturity, they can taste astringent, bitter and unripe. Wines of such grapes have a poor aging potential and taste dry and unripe. (2024-02)
